Frittata!

For dinner I've made a delicious frittata, which is basically a big omelette or a quiche without the crust.

Here's the recipe:
1 onion
Olive oil 
Few handfuls of spinach
Bell pepper (1)
Baby tomatoes
12 eggs
1 cup milk
Parmesan 

Preheat oven to 425
Sautée the onions in the olive oil until they are translucent in a large pan
Add the other vegetables and Sautée until wilted
Whisk together eggs and milk, and pour over the vegetables.
Let cook for 2-3 minutes on the stove
Transfer to the oven and bake for 20-30 minutes until puffy in the middle and cooked through.
Sprinkle Parmesan on the top and cook for a couple minutes until  crispy.
Cut into slices and enjoy hot!!
